The Place
El Diviso is a family-run farm in the hills of Pitalito, Huila, Colombia, owned by brothers Néstor and Adrián Lasso. Surrounded by lush vegetation and rich volcanic soils, the farm enjoys a stable microclimate that allows the coffee cherries to ripen slowly, developing natural sweetness and balance.
The Process
El Diviso cultivates the Chiroso variety, prized for its clarity and delicate structure. Ripe cherries are hand-picked and undergo an extended anaerobic fermentation in sealed tanks, carefully monitored to control temperature and acidity. After fermentation, the beans are pulped and washed to remove all mucilage, then slowly sun-dried on raised beds, ensuring even drying and preserving the vibrant acidity, clean profile, and subtle complexity inherent to the Chiroso variety.
The People
Managed by brothers Néstor and Adrián Lasso, El Diviso is the product of three generations of coffee expertise. They combine traditional knowledge with modern agronomy, experimenting with fermentation techniques, drying protocols, and meticulous cherry selection to elevate the quality of each lot. Their dedication is evident in every cup: the Chiroso washed beans reveal a lively brightness, 🌸🍃🍋 with notes of lemongrass, sweet herbal note, cardamom, and a subtle cedarwood finish, reflecting both the unique terroir and the care invested at every stage of production.
