The Place
Finca Las Palmas lies in the hills of Huila, in south-west Colombia, where elevations around 1700m, mild temperatures and optimal rainfalls. The farm is enveloped by a natural agroforestry mosaic — shade trees, bamboo groves and banana palms — that help preserve soil health, support biodiversity and foster a stable microclimate.
This environment nurtures the rare Pink Bourbon varietal, allowing cherries to ripen slowly and accumulate complex sugars before harvest.
The Process
This lot is processed by means of a natural anaerobic co-fermentation on Pink Bourbon cherries. After thorough hand-sorting and quality selection, whole cherries (still intact) are sealed in low-oxygen tanks, where controlled microbial activity develops over several days. During this ‘co-ferment’ stage, coconuts is added — providing additional fermentable sugars that deepen fruit complexity and mouthfeel. After fermentation, cherries are dried gently, often on raised beds under shade or diffused sunlight, with careful turning to ensure uniform drying while preserving volatile aromatics. This method produces a cup with layered tropical sweetness, full milky body and a silky texture, pure pina colada experience.

Finca Las Palmas is managed by the Echeverri family, who combine long-standing knowledge of Huila’s terroir with bold experimentation in post-harvest techniques. Their decision to explore co-fermentation — blending varietal tradition with innovation — reflects a commitment to quality, creativity and sustainability.
