Finca Los Nogales is located in the Bruselas district of Pitalito, Huila, at elevations between 1,950 and 2,000 metres above sea level. Nestled within Colombia's southern Andes, the farm benefits from volcanic soils and cool mountain temperatures. Within the estate, this coffee originates from the exclusive Níspero plot, one of the highest sections of the farm, where the combination of altitude and microclimate creates ideal conditions for producing coffees of exceptional clarity and complexity.

This lot is composed entirely of Typica, one of the oldest and most influential Arabica varieties in the world. Following selective hand-picking, the cherries are floated to ensure uniform ripeness, then undergo an anaerobic fermentation with must. Drying takes place on raised African beds. After milling, the coffee undergoes a unique natural decaffeination process. The beans are immersed in hot water to gently remove caffeine, before a natural solvent derived from coffee fruit compounds is used to restore and preserve the bean's structural integrity. Following a final washing stage, the coffee is stabilised through a controlled drying period, resulting in a decaffeinated coffee that retains the sweetness, clarity and complexity of its original profile.

The story of Los Nogales is inseparable from Oscar Hernández, a second-generation producer whose vision has transformed the family farm into one of Colombia's most innovative coffee estates. While deeply rooted in the traditions established by previous generations, Oscar has embraced a scientific approach to coffee processing, combining agronomy, microbiology and sensory research to push quality boundaries. Today, Los Nogales is internationally recognised for its pioneering work in fermentation science. Oscar is particularly known for developing techniques involving the controlled use of coffee-derived "musts" and fermentation by-products, allowing aromatic precursors to be enhanced with extraordinary precision.

This is a decaffeinated coffee that challenges expectations.
