The Place
Chelchele is situated in the Gedeb district of Yirgacheffe, southern Ethiopia, at elevations between 1,900 m and 2,150 m. Surrounded by native trees such as Cordia Africana and Ensete, the fertile soils and misty microclimate allow heirloom coffee varieties to develop exceptional clarity, balance, and natural sweetness.
The Process
Ripe cherries are hand-picked and carefully sorted at the Chelchele washing station. They undergo a 48–72 hour fermentation in wet tanks, then are pulped and thoroughly washed to remove all mucilage. Beans are sun-dried on raised African beds, frequently turned to ensure even drying and preserve the vibrant acidity, floral notes, and refined clarity characteristic of the region.
*The People *
Chelchele is supported by hundreds of smallholder farmers working in close cooperation with the washing station, managed by METAD. The community-driven approach ensures fair practices, training in agronomy, and careful management of water and natural resources, highlighting a commitment to sustainability. 🍑🌺🫖 The care and precision of the farmers are evident in every cup: expect delicate notes of blackberry, rose, and black tea, balanced by a clean, silky acidity, reflecting both the unique terroir and the ethical, sustainable practices behind the coffee.
